>----------> C A R R O T C A K E <----------< --- CAKE: 2 Cups flour, unsifted 2 Cups sugar 2 tsp. baking powder 1 tsp. baking soda 2 tsp. cinnamon 1 tsp. salt 1/2 tsp. nutmeg 1 1/4 Cups oil 3 Cups carrots, shredded 4 eggs Combine first 7 ingredients together thoroughly. Add oil, carrots, and eggs. Beat on medium speed for 3 minutes. Pour batter into a well greased, lightly floured 10-inch tube or oblong pan. BAKE in a 350F oven for 1 hour or until cake springs back when lightly touched in the middle. Cool 10 minutes in pan. Remove from pan to rack and completely cool. --- GLAZE: 3 oz package cream cheese, softened 1 2/3 Cup powdered sugar 1/8 tsp. salt 1 tsp. vanilla Beat all ingredients together until creamy.
