>-------> 1957 CHERRY FILLED SQUARES <-------< - CHERRY FILLING - 2 Cups pitted sour pie cherries, chopped, drained 1 Cup cherry juice 2 T. butter or margarine 1 1/3 Cups sugar 1/4 Cup cornstarch 1/4 tsp. salt 1 tsp. almond extract Few Drops Red Food Coloring Combine cherries, cherry juice, butter or margarine, sugar, cornstarch, and salt in saucepan. Stir over medium heat until the mixture boils and thickens. Let COOL. Blend in almond extract and red food coloring. - DOUGH - 3 1/2 Cups sifted flour 1/2 tsp. baking soda 1/2 tsp. salt 1/2 Cup butter or Margarine 1 Cup sugar 1 tsp. vanilla 1 egg 1/4 Cup buttermilk Cream butter or magarine, sugar and vanilla together thoroughly. Beat in egg. Add together flour, soda and salt. Mix thorougly. Beat in buttermilk. CHILL for 2 hours. Roll 1/8 inch thick and cut into 1 3/4 inch squares, Placing half of them on cookie sheets. Place 1 tsp. cherry filling in center of each square. Cut desired design from center of remaining squares. Top each filled square with cut out square and press edges together with a fork.
