>-----> CHICKEN VEG. & RICE CASSEROLE <-----< 1 Package of 3 or 4 Boneless, Skinless, Chicken Breasts -Cut Chicken Into Bite Size Pieces- 1 Can Campbell's Condensed Cream Of Chicken Soup 1 Can Campbell's Condensed Cream Of Potato Soup 1 Cup White or Brown Long Grain Uncooked Rice 2 1/4 Cups Water 1 Cup Diced Colby Cheese 2 Cups Mozzarella Cheese 1 Can Corn - Well Drained 1 Can French Style Green Beans - Well Drained 2 Cups Cooked Broccoli [optional] Onion Powder Pepper IN MEDIUM BOWL: Mix soup and water together, add chicken, rice and colby. Sprinkle onion powder medium to heavy over top. Sprinkle light to medium layer of pepper over top. Stir well. INTO LARGE DEEP DISH CASSEROLE or MEDIUM DEEP ROASTING PAN: Add above mixture. Cover top of mixture with Mozzarella Cheese. Tightly cover top of dish or pan with Aluminum Foil. BAKE FOR ONE HOUR, AT 375 F Remove from Oven. Carefully remove foil so as not to be burnt by escaping steam or tear the foil. Stir mixture well. Add a light sprinkling of Onion Powder over top, add all desired vegetables. Stir well. Cover tightly with the foil. BAKE An Additional 20 minutes AT 375 F Remove from Oven and carefully uncover. Stir well. May serve with cottage cheese, rolls or bread with jelly.
