>-------> 1956 EASY CUT-OUT COOKY <-------< 1/2 Cup shortening 1 Cup sugar 2 eggs, well beaten 2 T. cream 1 T. vanilla or almond extract 3 1/2 Cups sifted cake flour 2 tsp. baking powder Cream shortening, add sugar gradually, beat until light and fluffy. Stir in eggs, cream, and flavoring. Blend in the dry ingredients thorougly. Shape into a mound and wrap in waxed paper. Chill 1 hour. Roll 1/4 inch thick on a board lightly 'floured' with confectioners sugar. Dip cutter into confectioners sugar before cutting each, place on lightly greased baking sheet. Bake in 375F oven for 8 minutes or until delicately browned. NOTE: Flouring with confectioners sugar will prevent toughness or sticking. It also sweetens the cookies. -- COOKY Frosting -- 1 egg white 1 Cup confectioners sugar sifted Few grains salt Add sugar gradually to the unbeaten egg white. Beat until smooth and frosting is of consistency pour. Divide into two or three bowls and color in pastel shades as desired. Flavor as desired.
