>-------> 1957 CELERY MUSHROOM STUFFING <-------< 1 1/2 Cups butter or margarine 1 Cup minced onion 2 Cups diced celery 1 Cup sliced mushrooms 4 1/2 quarts day old bread - cubed 2 tsp. poultry seasoning 1/4 tsp. pepper 2 tsp. salt 2 Cups boiling water or broth (about) Saute' onions, celery, and mushrooms in butter over medium heat until tender, but not browned. Stir frequently. In a large bowl combine bread and seasonings. Add onion mixture and mix together. Add liquid, 1/2 cup at a time, tossing gently to coat bread cubes so the ingredients hold together but are not soggy.
