>-------> MOM'S SKILLET PANCAKES <-------< 1/2 Cup (1 stick) Oleo 1 Egg 1/4 Cup White Sugar 2 tsp. Baking Powder 2 Cup All Purpose White Flour 1 tsp. Vanilla About 1 3/4 Cups Milk Crisco Grease In Skillet Under Medium High Heat: Melt oleo. Remove from heat. In Medium to Large Mixing Bowl: Whip egg, add melted oleo, and sugar. Cream together. Mix in baking powder. Add the flour. Mix in half the milk. Add the vanilla. Add more milk mixing in a little at a time until the batter is just thin enough to pour nicely. [You may not have to use all the milk] In Skillet Under Medium High Heat: Melt enough crisco grease to cover the bottom. Pour batter in the middle of pan and use spoon to spread more evenly. Cook till sides are bubbly or until the underside is browned. Flip pancake over. Add more crisco if needed. Brown other side. Repeat till all batter is gone. Top pancake with butter and choice of heated pancake syrup or jelly. Yield: About 8 medium-large pancakes.
