>--> Sausage And Peppers Sandwich by Jo Ann <--< INGREDIENTS: 12 ounces lean hot italian turkey sausage, cut into 1/2 inch slices 1 sweet onion sliced 3 Cups frozen mixed sweet peppers 1/4 teaspoon ground black pepper 1/4 teaspoon crushed fennel seeds (optional) 1 Tablespoon balsamic vinegar 4 3-ounce whole grain rolls, split 1/2 Cup black olives, sliced DIRECTIONS: In a large nonstick skillet lightly sprayed with nonstick cooking spray or greased cook and stir sausage for 5 mins. over med-high heat until brown. Remove to bowl with slotted spoon. With a paper towel dab sausage to remove any drippings. In the skillet cook onion for 5 mins. over med-high heat, stirring occasionally. Stir in sausage, frozen sweet peppers, black pepper and fennel seeds if desired. Cover and cook for 5 mins. or until veggies are tender. Increase heat to high. Stir in vinegar and cook for 1 minute or until liquid is almost evaporated. Place 1 roll on each of 4 plates. Divide sausage mixture among rolls. Garnish with olives.
